Recently I pinned a recipe for Vegan Spice Cookies. It was actually a quest for egg-less cookie recipes. (Surprise: I was out of eggs!) In the midst of this baking adventure, I realized that I only had half of the required amount of soy milk, forcing me to borrow some of my roommates skim milk. That's what I'm calling these my "Almost Vegan Cookies." And because I realized that I was throwing the Vegan label out the window, why not add white chocolate chips? Yes, please.
Getting everything mixed together... Instead of a full cup of cranberries, I added only 3/4 cup of the cranberries. Then I added 1/2 cup of white chocolate chips.
Rolled and ready to bake!
They came out more round than intended...
But they were still a delicious hit!
